As promised, here are a few of my favorite sauces/dressings that I use for many different purposes. The bottom line is that there are certain vegetables that I just do NOT appreciate raw (ie. Broccoli, Brussel sprouts, cauliflower, bell peppers, onions…). However, so many of these veggies have certain phytonutrients that are only available in their raw state (and different nutrients available when cooked! **SEE MY LAST BLOG.) I find this to be so fascinating! Did you know that if you cook your vegetables BEFORE chopping them, you destroy those amazing cancer-fighting compounds? I know! Crazy, right? Just imagine some of your soup recipes. You throw your veggies in a pot of water with all of your ingredients. Once soft, you pour into your blender/vitamix – and voila! You’ve just succeeded in destroying those protective, cancer-fighting weapons you SHOULD have had in your arsenal. Today is a day to give thanks. Obviously on this day we are supposed to look at our lives and assess all of our blessings, focusing on what we’re, ….. well, …GRATEFUL for! Easy enough, right? Well, for me, not so much. This year it’s a bit challenging because I am not with my mother – and her absence is felt like a ton of bricks.
Last year, my mother lost her battle with breast cancer. I sincerely believe that she would be here today, showering her grandchildren with cha-chkas, if it wasn’t for her horrible diet. See, my mom, like SO many others from her generation, was raised on meat and potatoes. Even when people became a bit ‘enlightened’, she couldn’t adhere to the adage of ‘you are what you eat’. Had she made some changes to her diet, even after being diagnosed, I believe she’d be celebrating with us today.
Every day I fight the food battle in her honor. My goal for the iavril blog is to motivate and help people know HOW to be healthy! It’s way too important and irresponsible to just look the other way. About a month ago I met an old friend for lunch. I knew the restaurant she chose didn’t have any protein on the menu that I was willing to eat. Not that that’s a huge deal, but I always like to get protein in with each of my meals. That is not easy to accomplish when eating out and following a vegan(ish) diet. So I did what any freak who cares about their health would do. I brought my own (protein)!
Having to be sneaky about my “crazy” eating habits is nothing new for me. For years I’ve done things that used to make my family cringe. For example, bringing brown rice to Hibachi restaurants that only serve white is something my family is quite used to. OR, bringing chopped romaine lettuce to places that only serve iceberg. OR, bringing tempeh, tofu or a protein-powder envelope to a restaurant that doesn’t offer a protein that I will eat – this behavior is second nature to me! Sneaking my kale from my purse to my plate?
