Sauces Can Help You Eat Everything From Raw Veggies… To Poop!

As promised, here are a few of my favorite sauces/dressings that I use for many different purposes.  The bottom line is that there are certain vegetables that I just do NOT appreciate raw (ie. Broccoli, Brussel sprouts, cauliflower, bell peppers, onions…).  However, so many of these veggies have certain phytonutrients that are only available in their raw state (and different nutrients available when cooked!  **SEE MY LAST BLOG.)  But I want to delight in ALL of these health benefits, so I figured out ways to do that – and now I devour these babies R-A-W!  And you should too!  Here you go   …. I gotcha covered!

Sauces!  I’m a TOTAL sauce-a-holic!  Give me a great sauce or dressing and I swear I’d eat just about anything, EVEN POOP!  (Kay, MAYBE not poop – but you get the jist.  Actually, with the right sauce maybe I would eat poop 😯 ….EW!  But anyway)  I WANT ALL OF THESE NUTRIENTS!  Disguised under liquid yumminess – is how I do it!  So here they are…. So here’s my challenge, and maybe you can relate!  I know that some veggies offer more health benefits when eaten raw (broccoli, peppers, beets, ONIONS – OY!) and some vegetables’ nutrients are better absorbed when COOKED (mushrooms, spinach, tomatoes).

Fight/Prevent Cancer JUST By Chopping BEFORE Cooking!

I find this to be so fascinating!  Did you know that if you cook your vegetables BEFORE chopping them, you destroy those amazing cancer-fighting compounds?  I know!  Crazy, right?  Just imagine some of your soup recipes.  You throw your veggies in a pot of water with all of your ingredients.  Once soft, you pour into your blender/vitamix – and voila!  You’ve just succeeded in destroying those protective, cancer-fighting weapons you SHOULD have had in your arsenal.  And by the way, those compounds (now destroyed  🙁 ) are thought to be potent enough to change the course of cancers already in your body.  That’s SO not good!  So how do you make your soups AND fight cancer at the same time?  Ya just gotta do it a little backwards! About a month ago I met an old friend for lunch.  I knew the restaurant she chose didn’t have any protein on the menu that I was willing to eat.  Not that that’s a huge deal, but I always like to get protein in with each of my meals.  That is not easy to accomplish when eating out and following a vegan(ish) diet.  So I did what any freak who cares about their health would do.  I brought my own (protein)! 

Having to be sneaky about my “crazy” eating habits is nothing new for me.  For years I’ve done things that used to make my family cringe.  For example, bringing brown rice to Hibachi restaurants that only serve white is something my family is quite used to.  OR, bringing chopped romaine lettuce to places that only serve iceberg.  OR, bringing tempeh, tofu or a protein-powder envelope to a restaurant that doesn’t offer a protein that I will eat – this behavior is second nature to me!  Sneaking my kale from my purse to my plate?  No problem!  So proud to say, that is a routine I’ve got down!  Or so I thought.  Continue reading Hello!
